How does Ivory Search support stop words?
Do they (or anyone) have stop word lists that can be used as is?

They have php code. Ivory Search has php stop-word code?
What about stop word lists for specific things/subjects — general, finance, medical, chemical, etc?

Yes, you can add stopwords as described in the below plugin documentation.
You can get stopwords list from the below pages but we do not have stop word lists for specific things/subjects.
